Eton Mess

Eton Mess is one of those desserts that the kids love so much, they forget you're slipping in some fruit! It has become the "First Day Of School" dessert in our house ... school ... Eton ... get the connection? It's traditionally made with strawberries, but when I saw these enormous, beautiful blackberries at the grocery store, I decided to add those as well.

I washed the berries and sprinkled them with a tablespoon of sugar. This helps "macerate" the berries, which just means to get the juices flowing ...

Then I whipped up about 2 cups of whipping cream ... took a package of meringue nests and broke them into small pieces and folded them in.

Then folded in the berries. And then sprinkled it with a bit of cinnamon. 

That's it! Very easy and very delicious!

  1. Meringues are something that aren't super common down here, though my Google-Fu shows me that Walkers makes some, so I'd imagine I could probably find them in a gourmet food shop or someplace like World Market. Do you ever make your own meringues?
