If Heaven Lived in a Bowl ...

So, as you all know, Tuesday is soup night at our house. I often wait until Tuesday morning to decide what type of soup we are having. That way, I can use up anything that's hanging around in the refrigerator. Since I grocery shop on Tuesday morning, I can pick up any other ingredients I might need.

Yesterday, I had some bacon left over that needed using and I also had a ton of potatoes that were soon going to be sprouting. The perfect solution was Baked Potato Soup! This recipe got an 8.5 from my-very-picky-12-year-old-who-is-very-hard-to-impress! The trick is to cook the bacon until it's at that perfect bacon sweet spot - crispy ... but not brittle ... still chewy.

Baked Potato Soup

6 bacon strips, chopped
1 medium onion, diced
2 cloves garlic, minced
6 tbsp. all purpose flour
1 tsp salt
1 tsp dried basil
1/2 tsp pepper
6 cups chicken broth
4 large potatoes, peeled and cubed
1 cup half & half cream
Shredded cheddar cheese

In a large saucepan, saute the bacon until it's at the bacon sweet spot (see above). Remove bacon. You'll need about 2 tbsp of bacon fat (drain off any excess). Saute the onion and garlic in the bacon fat. Stir in flour, salt, basil and pepper. Cook for 2 minutes. Slowly add chicken broth. Bring to a boil and stir for 2 minutes. Add the potatoes and cook for 20-30 minutes, stirring occasionally. You want the potatoes to be really well done and soft. Add cream and bacon and heat through but do not let the cream boil. Garnish with cheese. You could also leave the bacon out and use it as a garnish, but it smelled divine simmering in the crock-pot.

Right, need to mention that ... before adding the cream, I transferred the soup to my crock-pot on the "Keep Warm" setting, and then added the cream. As you know, we eat in shifts on Tuesdays, so this worked perfectly. I made some whole wheat bread in the breadmaker, and we all lived happily ever after!

    Last week a dear friend of ours underwent back surgery so today I’m making Bake Potato Soup which Beth and I will deliver to the patient and his wife!
    Comfort food is always good when on the mend!


  4. I was the lucky recipient of the baked potato soup from Ralph and Beth - OMG!! Yummy! I had to sneak into the kitchen to eat the leftover's for lunch before my poor husband (who had the back surgery) woke up from his nap.
